Ingredient
- 1 large pomelo
- 1 large onion
- 100 gm dried preserved shrimp, rinsed and drained well
- 1 large bunch coriander (aka Chinese parsley), chopped
- 250 gm roasted cashew nuts, crushed
- 2 tsp cooking oil
Dressing:
- 60 ml fish sauce
- 6 Thai limes, juiced
- 6 - 8 chilli padi
- 1 tsp sugar
Method:
- Break flesh of pomelo to bite size. Place in salad bowl with coriander and onions (thinly sliced)
- Sitr fry dried shrimp until crispy. Set aside to cool (I remembered Sammie cut the dried shrimp into small pieces before stir fry)
- Throw in crushed cashew nuts
- Toss dressing with all ingredients to serve
